Share new recipes during the month of January because - Veganuary 😉

This vegan smoked salmon rice bowl is the perfect quick-and-easy meal to make on a busy weeknight!

Make these rice bowls your own by customizing the toppings and/or flavorings. Here’s how we made ours:

INGREDIENTS
- 150g brown rice
- 2 tbs rice vinegar
- 1 tsp mirin
- 1 tbs soy sauce
- 11/2 tbs vegan mayo
- 1 tsp Sriracha
- Juice of 1/2 lime, plus lime wedges to serve
- 1/2 bunch cilantro
- 1 packet Current Foods Smoked Salmon
- 1/2 avocado, cut into chunks
- 200g frozen edamame
- 2 tsp pickled ginger

METHOD
1. Cook the rice or use some leftovers from the fridge.
2. Combine the mirin, rice vinegar, and soy sauce in a bowl. Add the rice and mix to coat.
3. Combine mayo, Sriracha and lime juice in a small bowl. Divide the rice among two serving bowls and top with Current Foods smoked salmon, spicy mayo, avocado, edamame, ginger and cilantro leaves.

Optional
- Serve with sesame seeds and lime wedges

All we want for Christmas is...

This killer vegan salmon board. We’re pretty proud of this one.

Not only does it look 🔥 but it’s super easy to make.

🎄 8 ounces cream cheese (vegan or reg), at room temperature
🎄 A splash of plant-based milk (to make the texture a bit softer)
🎄 Kosher salt and freshly ground black pepper
🎄 1 garlic clove
🎄 4 ounces Current Foods Smoked Salmon
🎄 2 tablespoons fresh dill fronds, finely chopped + whole sprigs for decoration
🎄 Crackers of choice

Mix together the ingredients. Place out the crackers in the desired shape. Tear a piece of CF Smoked Salmon and place it on each cracker, but the top and the bottom one. Using a spritzer, top each cracker with a spritz of the creme cheese mixture. Fill the gaps with dill sprigs to create a full appearance.
Decorate the top cracker with a star. Leave the bottom one empty to mimic a tree trunk.

Tip! Get creative with the creme cheese mixture. Add more herbs, capers, or lemon juice for example. The sky’s the limit!

The Holidays are the perfect reason to get festive, and last week we did just that. Together with @berkeleybowl and @nectarhardseltzer we invited guests to celebrate the official launch of our smoked salmon product in retail. Michelin star chef @tntreeee and Executive chef @chefcayenne led two separate guided cooking classes with our guests, and the results were stunning.

We hope to celebrate new wins with more of you next year 😉

Here’s something we haven’t shared with a lot of people...

Our smoked salmon dip. 🔥

We’re not trying to gatekeep, so here y’all are. The recipe for a mind-blowing vegan option for all of this Holiday season get togethers.

🔥 8 ounces cream cheese (vegan or reg), at room temperature
🔥 1/3 cup plant-based milk
🔥 Kosher salt and freshly ground black pepper
🔥 1 garlic clove
🔥 4 ounces Current Foods Smoked Salmon, chopped
🔥 1 tablespoon fresh dill fronds, finely chopped
🔥 4 sprigs fresh chives, thinly sliced
🔥Sliced veggies and/or crackers. We like to use cucumbers, bell peppers, carrots and crackers.

Optional; capers, squeeze of lemon juice

Directions
Combine the cream cheese, and milk. Whisk until smooth. Fold in the dill, chives, garlic and CF Smoked Salmon. Salt and peppar to taste. Transfer to a small serving bowl and serve with vegetables and/or crackers.
